One-Pan Garlic Butter Turkey & Rice Skillet

This is my go-to when I want a real dinner for two without real dinner cleanup. Ground turkey, garlic butter, and rice simmer together in one skillet until the rice soaks up all that flavor — under $9 total, and it reheats even better the next day.

Ingredients
  

  • 1 lb ground turkey 93/7
  • 1 cup jasmine rice rinsed
  • 2 cups chicken broth
  • 3 cloves garlic minced
  • 2 tbsp butter
  • 1 tbsp soy sauce
  • 1 cup frozen peas and carrots
  • Salt and pepper to taste
  • 2 green onions sliced, for garnish

Method
 

  1. Melt the butter in a large skillet over medium heat and add the garlic, cooking 30 seconds until fragrant.
  2. Add the ground turkey, breaking it apart, and cook until browned, about 5-6 minutes.
  3. Stir in the rice, chicken broth, and soy sauce, scraping up any browned bits.
  4. Bring to a simmer, cover, and cook 15-18 minutes, until the rice is tender and liquid is absorbed.
  5. Stir in the frozen peas and carrots and cook 2-3 minutes more, until heated through.
  6. Season with salt and pepper, top with green onions, and serve.
