One-Pan Garlic Butter Turkey & Rice Skillet
This is my go-to when I want a real dinner for two without real dinner cleanup. Ground turkey, garlic butter, and rice simmer together in one skillet until the rice soaks up all that flavor — under $9 total, and it reheats even better the next day.

- Melt the butter in a large skillet over medium heat and add the garlic, cooking 30 seconds until fragrant.
- Add the ground turkey, breaking it apart, and cook until browned, about 5-6 minutes.
- Stir in the rice, chicken broth, and soy sauce, scraping up any browned bits.
- Bring to a simmer, cover, and cook 15-18 minutes, until the rice is tender and liquid is absorbed.
- Stir in the frozen peas and carrots and cook 2-3 minutes more, until heated through.
- Season with salt and pepper, top with green onions, and serve.
