- Heat olive oil in a small saucepan over medium heat. Add the diced onion and cook for 2–3 minutes until softened.
- Add the minced garlic, Italian seasoning, and smoked paprika. Stir for 30 seconds until fragrant.
- Add the diced tomatoes and stir for 1 minute.
- Pour in the chicken broth and bring to a gentle simmer.
- Add the white beans and shredded chicken. Stir to combine and simmer for 8–10 minutes to let the flavours develop.
- Use the back of a spoon or a fork to lightly crush a few of the white beans against the side of the pot — this naturally thickens the broth.
- Stir in the spinach and cook for 1–2 minutes until wilted.
- Reduce heat to low and stir in the cream. Simmer gently for 2 more minutes. Do not boil after adding cream.
