Beef & Broccoli Stir Fry

Ingredients
  

  • 6 oz lean flank steak or sirloin thinly sliced
  • 1.5 cups broccoli florets
  • 1 clove garlic minced
  • 1/2 tsp fresh ginger grated
  • 2 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp cornstarch
  • 1 tbsp olive oil
  • 1/2 cup cooked white rice
  • 1 tsp sesame seeds optional

Method
 

  1. Whisk together soy sauce, honey, and cornstarch in a small bowl to make the sauce.
  2. Heat olive oil in a skillet or wok over high heat.
  3. Add the sliced beef and sear for 2 to 3 minutes until browned.
  4. Remove the beef from the skillet and set aside.
  5. Add the broccoli florets to the skillet with a splash of water and cover to steam for 3 minutes.
  6. Add the garlic and ginger, stirring for 30 seconds.
  7. Return the beef to the skillet.
  8. Pour in the sauce and toss everything together until the sauce thickens and coats the beef and broccoli.
  9. Serve over the cooked white rice and sprinkle with sesame seeds if using.

Notes

Thinly slicing a smaller cut of steak stretches it much further than it looks — partially freezing the beef for 15 minutes beforehand makes it much easier to slice thin.
