Chicken & Brown Rice Power Bowl

Ingredients
  

  • 5 oz boneless skinless chicken breast diced
  • 1/2 cup cooked brown rice
  • 1/2 cup broccoli florets
  • 1/4 cup shredded carrots
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp olive oil
  • 1 clove garlic minced
  • 1/2 tsp ground ginger
  • 1 tsp sesame seeds optional

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add the diced chicken breast and cook until golden and cooked through, about 6 to 7 minutes.
  3. Add minced garlic and ground ginger, stirring for 30 seconds.
  4. Add the broccoli florets and a splash of water, covering to steam for 3 minutes until tender.
  5. Stir in the soy sauce and sesame oil.
  6. Spoon the cooked brown rice into a bowl.
  7. Top with the chicken and broccoli mixture.
  8. Add shredded carrots on top and sprinkle with sesame seeds if using.
  9. Serve warm.
