Chicken & Brown Rice Power Bowl: A Balanced High-Protein Lunch Under $4

This chicken and brown rice power bowl is the kind of lunch that keeps you full and focused straight through the afternoon slump. Tender diced chicken breast gets a quick sear until golden, then simmers briefly with garlic, ginger, and a splash of soy sauce for a savory, restaurant-style flavor. Steamed broccoli and a scattering of crisp shredded carrots bring color, crunch, and nutrients, while a bed of hearty brown rice rounds the bowl out into something genuinely filling. With 40 grams of protein and a nice balance of complex carbs, this bowl is built to keep energy steady rather than spiking and crashing. It’s also endlessly meal-prep friendly, since chicken, rice, and vegetables all hold up well in the fridge for a few days. At under $4 a serving, it’s proof that a well-balanced, satisfying lunch doesn’t require takeout prices. Batch it on a Sunday and you’ve got lunch sorted for half the week.
