Vanilla Protein Panna Cotta with Berries

Ingredients
  

  • 1 cup unsweetened almond milk
  • 1/2 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 tsp unflavored gelatin
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/4 cup mixed berries for topping
  • Pinch of salt

Method
 

  1. Pour 2 tablespoons of the almond milk into a small bowl and sprinkle the gelatin over it, letting it bloom for 5 minutes.
  2. Warm the remaining almond milk in a small saucepan over low heat until just steaming, not boiling.
  3. Whisk the bloomed gelatin into the warm almond milk until fully dissolved.
  4. Remove from heat and whisk in the protein powder, Greek yogurt, honey, vanilla extract, and salt until smooth.
  5. Pour the mixture into two small serving cups or ramekins.
  6. Chill in the fridge for at least 3 hours, or until fully set.
  7. Top with fresh mixed berries just before serving.

Notes

A small packet of unflavored gelatin is inexpensive and makes several batches of panna cotta, so the real cost per serving comes down to whatever berries you have on hand.
