Vanilla Protein Panna Cotta with Berries: An Elegant High-Protein Snack Under $2

This vanilla protein panna cotta proves that a genuinely elegant dessert doesn’t need to be complicated or expensive. A simple gelatin-set mixture of almond milk, Greek yogurt, and vanilla protein powder chills into a silky, custard-like texture that holds together perfectly once set, much like a classic Italian panna cotta but built with real nutrition in mind. A touch of honey and vanilla extract keep the flavor smooth and lightly sweet, while a handful of fresh mixed berries on top adds brightness, color, and a slightly tart contrast to the creamy base. With 19 grams of protein per serving, this dessert works just as well as a light, satisfying snack as it does an after-dinner treat that feels genuinely special. The hands-on time is minimal, with most of the work happening passively in the fridge, making this an easy one to set up in the morning and enjoy that evening. At under $2 per serving, it’s a refined little dessert that costs far less than it looks like it should.

Ingredients

  • 1 cup unsweetened almond milk
  • 1/2 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 tsp unflavored gelatin
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/4 cup mixed berries for topping
  • Pinch of salt

Method

  1. Pour 2 tablespoons of the almond milk into a small bowl and sprinkle the gelatin over it, letting it bloom for 5 minutes.
  2. Warm the remaining almond milk in a small saucepan over low heat until just steaming, not boiling.
  3. Whisk the bloomed gelatin into the warm almond milk until fully dissolved.
  4. Remove from heat and whisk in the protein powder, Greek yogurt, honey, vanilla extract, and salt until smooth.
  5. Pour the mixture into two small serving cups or ramekins.
  6. Chill in the fridge for at least 3 hours, or until fully set.
  7. Top with fresh mixed berries just before serving.

Notes

A small packet of unflavored gelatin is inexpensive and makes several batches of panna cotta, so the real cost per serving comes down to whatever berries you have on hand.
