Fluffy Cottage Cheese Egg Scramble with Everything Bagel Seasoning — 36g Protein, Under $3

The everything bagel seasoning trend exists for good reason — it is one of the most complete flavour combinations ever put on a jar, and it does something remarkable to scrambled eggs. This cottage cheese scramble uses the same technique as our creamiest egg recipes — cottage cheese folded into eggs over low heat until everything melts together into something billowy and rich — then finished with a generous dusting of everything bagel seasoning that adds sesame, garlic, onion, and salt in one move. On a toasted slice of whole grain bread it is a complete, high-protein breakfast that takes eight minutes and costs under three dollars. The kind of morning meal that makes the rest of the day easier to get through.

Fluffy Cottage Cheese Egg Scramble with Everything Bagel Seasoning

Total Time 8 minutes
Servings: 1
Calories: 360

Ingredients

  • 3 large eggs
  • 1/3 cup low-fat cottage cheese
  • 1 tsp everything bagel seasoning plus extra to finish
  • Salt and pepper to taste
  • 1/2 tsp butter or cooking spray
  • 1 slice whole grain bread toasted
  • Optional: sliced avocado on the side and a drizzle of hot sauce

Method

  1. Crack the eggs into a bowl and whisk thoroughly until fully combined and slightly frothy.
  2. Add the cottage cheese and a pinch of salt and pepper. Stir to combine — small cottage cheese curds are fine.
  3. Heat a non-stick skillet over medium-low heat. Add the butter and let it melt without browning.
  4. Pour the egg and cottage cheese mixture into the pan. Let it sit undisturbed for 20–30 seconds until the edges just begin to set.
  5. Using a spatula, gently fold the eggs from the outside inward in slow, deliberate strokes.
  6. Continue folding every 20–30 seconds over medium-low heat. The cottage cheese will melt into the eggs as they cook.
  7. Remove from heat when the eggs are still slightly underdone — they will finish from residual heat.
  8. Pile immediately onto the toasted bread.
  9. Dust generously with everything bagel seasoning.
  10. Add avocado on the side and hot sauce if using. Serve immediately.

Notes

Everything bagel seasoning is available in most grocery stores for around three dollars a jar and lasts for months — it replaces four to five separate spices in one shake and adds meaningful flavour to eggs, avocado toast, salads, and roasted vegetables. A large tub of cottage cheese used across multiple breakfast and smoothie recipes throughout the week brings the per-serving protein cost down to almost nothing compared to buying individual protein sources separately.
