Ingredients
  

  • 1 cup plain nonfat Greek yogurt
  • 1 scoop about 30g vanilla protein powder
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup brewed coffee cooled
  • 8 ladyfinger cookies roughly broken
  • 1 tbsp cocoa powder for dusting

Method
 

  1. In a bowl, whisk together the Greek yogurt, protein powder, powdered sugar, and vanilla extract until smooth and creamy.
  2. Pour the cooled coffee into a shallow dish.
  3. Quickly dip each piece of ladyfinger into the coffee, just enough to soak without turning soggy.
  4. Layer the soaked ladyfingers in the bottom of 4 small cups or jars.
  5. Spoon a layer of the yogurt-protein mixture over the ladyfingers.
  6. Repeat with another layer of soaked ladyfingers and yogurt mixture until the cups are full.
  7. Cover and refrigerate for at least 2 hours to let the flavors set.
  8. Dust with cocoa powder just before serving.

Notes

Brew a little extra coffee from your morning pot instead of buying espresso — it works just as well for soaking the ladyfingers and keeps this dessert practically free to flavor.
