Honey Garlic Turkey Meatballs with Rice (40g Protein, Under $9 for Two)
Sticky honey garlic turkey meatballs served over rice — a budget dinner for two with 40g of protein per serving, ready in 30 minutes for about $4 a plate. This is my answer to takeout cravings. The sauce does all the work — sticky, garlicky, a little sweet — and it costs less than one order of the real thing for two full plates.
Ingredients
Method
- Preheat the oven to 400°F and line a baking sheet with foil.
- Mix the ground turkey, breadcrumbs, egg, minced garlic, salt, and pepper. Roll into 16 meatballs.
- Bake for 18-20 minutes, until cooked through and lightly browned.
- Meanwhile, whisk the honey, soy sauce, and garlic in a small saucepan over medium heat.
- Bring to a simmer, then stir in the cornstarch slurry and cook 1-2 minutes until thickened.
- Toss the baked meatballs in the sauce until fully coated.
- Serve over rice, garnished with sesame seeds and green onion.
