Honey Garlic Turkey Meatballs with Rice (40g Protein, Under $9 for Two)

Sticky honey garlic turkey meatballs served over rice — a budget dinner for two with 40g of protein per serving, ready in 30 minutes for about $4 a plate. This is my answer to takeout cravings. The sauce does all the work — sticky, garlicky, a little sweet — and it costs less than one order of the real thing for two full plates.

Calories: 540

Ingredients

  • 1 lb ground turkey 93/7
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 cloves garlic minced (for sauce)
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 cups cooked rice
  • Sesame seeds and green onion for garnish

Method

  1. Preheat the oven to 400°F and line a baking sheet with foil.
  2. Mix the ground turkey, breadcrumbs, egg, minced garlic, salt, and pepper. Roll into 16 meatballs.
  3. Bake for 18-20 minutes, until cooked through and lightly browned.
  4. Meanwhile, whisk the honey, soy sauce, and garlic in a small saucepan over medium heat.
  5. Bring to a simmer, then stir in the cornstarch slurry and cook 1-2 minutes until thickened.
  6. Toss the baked meatballs in the sauce until fully coated.
  7. Serve over rice, garnished with sesame seeds and green onion.

Notes

Buy ground turkey in the family-size pack and freeze half in a flat zip bag — it thaws faster and stretches your grocery trip across two dinners.
