BBQ Chicken & Black Bean Salad Bowl: A Smoky High-Protein Lunch Under $4

This BBQ chicken and black bean salad bowl takes plain cooked chicken breast and turns it into something genuinely craveable with just a couple tablespoons of BBQ sauce. Tossed while still warm, the chicken soaks up that smoky-sweet flavor before landing on a bed of crisp romaine alongside black beans, corn, and diced tomato for a Tex-Mex inspired lunch that feels far more exciting than a typical salad. A sprinkle of shredded cheddar on top adds richness, tying the whole bowl together into something hearty enough to actually keep you full until dinner. With 40 grams of protein and a good mix of fiber from the beans and corn, this bowl checks every box for a balanced, satisfying midday meal. It works just as well served warm right after cooking as it does chilled from the fridge the next day, making it an easy one to prep in advance. At $3.40 a serving, it’s a smoky, satisfying lunch that costs a fraction of a fast-casual bowl.
