Ingredients
  

  • 1/2 cup rolled oats
  • 1/2 cup low-fat milk or any milk of choice
  • 1/3 cup plain Greek yogurt
  • 1 tbsp natural peanut butter
  • 1/2 ripe banana sliced
  • 1 tsp honey or maple syrup optional
  • 1/4 tsp vanilla extract
  • A pinch of cinnamon
  • Pinch of salt

Method
 

  1. Add the rolled oats, milk, Greek yogurt, vanilla extract, cinnamon, and pinch of salt to a jar or container with a lid. Stir well to combine.
  2. Add the peanut butter and stir again until it’s mostly incorporated — a few streaks are fine.
  3. Drizzle in honey or maple syrup if using and give a final stir.
  4. Seal the jar and refrigerate overnight, or for at least 6 hours.
  5. In the morning, give the oats a stir — they will have thickened considerably. Add a splash of milk if you prefer a looser texture.
  6. Top with the sliced banana right before eating.
  7. Eat cold straight from the jar, or microwave for 60–90 seconds if you prefer it warm.

Notes

Buy peanut butter in the largest jar available — the cost per serving drops dramatically compared to small jars. Natural peanut butter with just peanuts and salt is often cheaper than the processed kinds and has a better macro profile. Overripe bananas are usually marked down at the store and work perfectly here since they’re sweeter and easier to mash. Rolled oats in a bulk bag cost a fraction of single-serving packets.
