Sheet Pan Chicken Fajitas (38g Protein, Under $10 for Two)

Sheet pan chicken fajitas with peppers and onions — a restaurant-quality dinner for two with 38g of protein per serving, ready in 35 minutes for under $10 total. This is the dinner that made me stop ordering fajitas out. Everything roasts on one sheet pan while you do literally nothing, and it tastes like it came from a cast-iron skillet with a server yelling behind it.

Total Time 35 minutes
Servings: 2
Calories: 480

Ingredients

  • 1 lb boneless skinless chicken breast, sliced into strips
  • 2 bell peppers sliced
  • 1 large onion sliced
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 small flour tortillas
  • Lime wedges for serving

Method

  1. Preheat the oven to 425°F and line a sheet pan with parchment paper.
  2. Toss the chicken, bell peppers, and onion with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Spread everything in a single layer on the sheet pan.
  4. Roast for 20-22 minutes, stirring halfway, until the chicken is cooked through and the vegetables are lightly charred.
  5. Warm the tortillas and serve the chicken and vegetables alongside, with lime wedges for squeezing.

Notes

Buy whole bell peppers instead of pre-sliced fajita mix bags — slicing them yourself costs roughly half as much for the same amount.
