Sheet Pan Herb Turkey with Sweet Potatoes & Green Beans (40g Protein, Under $10 for Two)

A full Thanksgiving-style dinner for two on one sheet pan — herb-roasted turkey breast, sweet potatoes, and green beans with 40g of protein per serving, ready in 40 minutes for under $10 total. This is Thanksgiving dinner scaled down for a regular Tuesday, or for a small table where a whole bird makes no sense. Everything roasts on one pan, and you still get the turkey, the sweet potatoes, and the green beans.

Ingredients

  • 12 oz turkey breast tenderloin
  • 2 medium sweet potatoes cubed
  • 2 cups green beans trimmed
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1/2 tsp dried rosemary crushed
  • Salt and pepper to taste

Method

  1. Preheat the oven to 425°F and line a sheet pan with parchment paper.
  2. Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, and spread them on one side of the pan.
  3. Mix the remaining olive oil with the garlic, thyme, sage, rosemary, salt, and pepper, then rub it all over the turkey.
  4. Place the turkey on the pan and roast for 15 minutes.
  5. Add the green beans to the pan, tossing them in the pan juices, and roast another 12-15 minutes, until the turkey reaches 165°F inside and the sweet potatoes are tender.
  6. Rest the turkey for 5 minutes, slice, and serve with the vegetables.

Notes

Buy a turkey breast tenderloin or a small bone-in turkey breast instead of a whole bird — you get the Thanksgiving flavor for a fraction of the cost and no leftovers you can’t finish.
