Apple Pie Cottage Cheese Bowl (25g Protein, Ready in 10 Minutes)

Warm cinnamon apples over creamy cottage cheese with crunchy pecans — 25g of protein per serving, ready in 10 minutes for about $1.60 a serving. This is what I eat when I want apple pie at 3pm and don’t want to bake one. Warm cinnamon apples, cold cottage cheese, and a few pecans on top, and it actually tastes like the real thing.

Ingredients

  • 1 cup cottage cheese
  • 1/2 medium apple diced
  • 1/2 tsp cinnamon
  • 1 tsp honey
  • 1 tbsp chopped pecans
  • 1 tsp water
  • Pinch of nutmeg

Method

  1. Add the diced apple, cinnamon, nutmeg, and water to a small skillet over medium heat.
  2. Cook for 4-5 minutes, stirring occasionally, until the apple is tender and the liquid has cooked down.
  3. Stir in the honey and remove from the heat.
  4. Spoon the cottage cheese into a bowl.
  5. Top with the warm apples and sprinkle with chopped pecans.

Notes

Buy apples by the bag instead of loose and use the slightly bruised ones for this bowl — cooking them down hides the blemishes and they’re often marked down.
