Baked Banana Protein Oats (18g Protein, Meal-Prep Ready)

A baked banana protein oat tray you slice and reheat all week — 18g of protein per serving, ready in 35 minutes for about $1.10 a serving. This is the tray I bake on Sunday so breakfast stops being a decision. It comes out like banana bread but eats like oatmeal, and it holds up in the fridge better than any bowl of instant oats ever has.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 ripe bananas mashed
  • 2 scoops vanilla protein powder
  • 2 cups milk
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 banana sliced, for topping

Method

  1. Preheat the oven to 375°F and grease an 8×8-inch baking dish.
  2. In a bowl, whisk together the mashed banana, milk, eggs, and vanilla extract.
  3. Stir in the oats, protein powder, baking powder, cinnamon, and salt until combined.
  4. Pour the mixture into the baking dish and arrange the sliced banana on top.
  5. Bake for 28-30 minutes, until set and lightly golden on top.
  6. Let cool slightly, then slice into 4 portions. Store in the fridge and reheat before serving.

Notes

Use overripe bananas you’d otherwise toss — they’re sweeter, so you can cut back on added sugar and still get a naturally sweet tray.
