No-Bake Pumpkin Protein Bites (9g Protein, Halloween Snack)

No-bake pumpkin protein bites with warm fall spice — 9g of protein per serving, ready in 15 minutes plus a quick chill, for about $0.60 a serving. This is my Halloween-week snack when the candy bowl is out and I want something in my hand that isn’t fun-size chocolate. They’ve got the same spiced pumpkin flavor without the sugar crash after.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup peanut butter
  • 1/4 cup vanilla protein powder
  • 2 tbsp honey
  • 1 tsp pumpkin pie spice
  • 2 tbsp mini chocolate chips
  • Pinch of salt

Method

  1. Combine the oats, pumpkin puree, peanut butter, protein powder, honey, pumpkin pie spice, and salt in a bowl and mix until fully combined.
  2. Fold in the chocolate chips.
  3. Chill the mixture in the fridge for 15-20 minutes to firm up.
  4. Roll into 12 balls, about 1 tablespoon each.
  5. Store in the fridge for up to a week or freeze for longer storage.

Notes

Buy a full can of pumpkin puree even though the recipe only needs half — freeze the rest flat in a zip bag for the next batch instead of letting it go to waste.
