High-Protein Breakfast Quesadillas (32g Protein, Ready in 20 Minutes)

Crispy breakfast quesadillas with eggs, turkey sausage, and melty cheese — 32g of protein per serving, ready in 20 minutes for about $2.50 a serving. This is the breakfast I make when I actually have to be somewhere. Everything cooks in one pan, it folds up to eat with one hand, and it still has more protein than most people get by lunch.

Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 4 oz turkey breakfast sausage cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 2 large flour tortillas
  • 1/4 cup diced bell pepper
  • 2 tbsp diced onion
  • Salt and pepper to taste
  • 1 tsp oil or butter for the pan

Method

  1. Whisk the eggs with milk, salt, and pepper.
  2. Heat the oil in a nonstick skillet over medium heat and sauté the bell pepper and onion for 2 minutes.
  3. Pour in the eggs and scramble gently until just set, then stir in the cooked turkey sausage. Remove from the skillet.
  4. Wipe out the skillet and lay one tortilla flat over medium-low heat. Sprinkle half the cheese over one half, top with the egg mixture, then the remaining cheese.
  5. Fold the tortilla in half and cook 2-3 minutes per side, until golden and the cheese is melted.
  6. Repeat with the second tortilla, slice into wedges, and serve warm.

Notes

Buy a block of cheese and shred it yourself instead of pre-shredded bags — it melts better and runs noticeably cheaper per ounce.
