Turkey Sausage Breakfast Hash (28g Protein, One Skillet)

A one-skillet turkey sausage breakfast hash with potatoes and peppers — 28g of protein per serving, ready in 25 minutes for about $2.20 a serving. This is the breakfast I make when I want something that actually feels like a meal, not a snack pretending to be one. Everything crisps up in the same skillet, and it reheats just as well the next morning.

Ingredients

  • 8 oz turkey breakfast sausage casings removed
  • 2 cups diced potatoes
  • 1/2 cup diced bell pepper
  • 1/4 cup diced onion
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 large eggs
  • Sliced green onion for garnish

Method

  1. Heat the olive oil in a large skillet over medium heat. Add the potatoes and cook 10-12 minutes, stirring occasionally, until golden and fork-tender.
  2. Push the potatoes to one side and add the turkey sausage, breaking it apart, cooking until browned.
  3. Add the bell pepper and onion, stirring everything together, and season with smoked paprika, salt, and pepper.
  4. Cook 3-4 minutes more, until the vegetables have softened.
  5. Make two wells in the hash and crack an egg into each. Cover and cook 3-4 minutes, until the eggs reach your preferred doneness.
  6. Garnish with green onion and serve straight from the skillet.

Notes

Use russet or gold potatoes instead of pre-cut hash brown bags — a whole potato costs a fraction as much and holds up better when pan-fried.
